SUN DRYING IN OPEN PATIOS

Non-pulped fruits are spread on the cement patio so that the sun heat can be used to dry the coffee cherry pulp. During the period of sun exposure the coffee is manually “mixed with a broom”, guaranteeing a uniform dryness. This stage can last from XXXX a YYYYY days. Depending on the percentage of moisture still in the coffee beans, they can be sent directly to the warehousing silos or to the hot air dryer.
